The Easiest 30 Minute Banana Muffins!

What do i do when life gives me old bananas? I always make a banana bread!! But today, i’m showing you an even simpler recipe for banana bread, made into muffins for a faster cooking time. These are the easiest 30 minute banana muffins, ever! Enjoy!

Like I mentioned earlier: you will only need 30 minutes from start to finish to get perfect, little snack sized treats made for your whole family. Feel free to add any ingredients you want to, to make them our own fun creation. For my recipe, I’ve added chopped walnuts and semi-sweet chocolate chips (per the request of my daughter)!

Watch them carefully in the oven, as to prevent overcooking or burning them. Every oven is different so you should check them closely to ensure they come out moist!

Ingredients

  • 3-4 ripe bananas smashed
  • 1/3 cup of melted butter
  • 3/4 cup granulated sugar
  • 1 egg beaten
  • 1 tsp vanilla
  • 1 tsp baking soda
  • pinch of salt
  • 1 1/2 cups of all-purpose flour
  • 3/4 cups of chopped walnuts optional
  • 3/4 cups of chocolate chips optional

Instructions

  1. All you will need is a wooden spoon to mix everything together- it's just that easy. Preheat your oven to 350 F. Mix the butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg and vanilla. Then, sprinkle in the baking soda and salt over the mixture and mix it in well. Adding the flour in last, little by little, until fully incorporated. Spray your muffin tin well, to avoid any sticking. Add the batter into each cup until 3/4 way full. Bake for ~15 minutes, checking to see that the center is cooked through. Cool on rack and enjoy!
