Happy St. Patrick’s Day!

Did I ever find the leprechaun, you ask? I told Charli that he must have gone back to his rainbow to protect his pot of gold. (She has been telling me all about his visit to her classroom last Thursday, so I had to oblige!) We hope you had a fun and safe St. Patrick’s Day! We sure did! Here’s how our adventures went today!

No St. Patrick’s Day would be complete without a fun and easy-to-make treat for the kiddos. I opted for Lucky Charms treats instead of coloring Rice Krispie treats! They turned out just as I suspected: super sweet, and delicious! Have you made them before? They’re really cute and festive!

We decided the day before to go into the city to see the Chicago River get dyed green. If you’ve ever been to Chicago for St. Patrick’s Day, then you understand what a mad house, but amazing party it is! Parades, the river, the bars, the music….it’s everything you would want to come into the city for to have a fun weekend with friends!

We used to go every year, but since having kids, I think we have gone down every other year. It never fails that it’s still cold downtown, and that you will be bundled up while touring around River North to see the majestic green water!

After walking around the river, you have got to grab a bite to eat at one of the MANY fabulous Chicago restaurants. Since we were there with another couple and their kiddo, we opted for a family-friendly eatery, which we highly recommend: Eataly. (I would legit eat there everyday if I could! We’ve been to the original one in Italy and it’s just as good!)

After lunch, we walked back to the “El” train to catch a ride back to Cory’s office, where he needed to do a little bit of work. We had his whole office to ourself, so the kids ran around and had fun, while I enjoyed some coffee and cookies in the amazing kitchen that they have.

My plan for dinner was to cook up some corned beef that I had bought from Costco the other day. But we got back at 5pm and we were getting hungry. So, instead, I whipped up some orange chicken (from Trader Joe’s) and I cooked some asparagus and made a salad. It was green, so that counts as a festive St. Patrick’s Day dinner, right? Corned Beef can wait until tomorrow!
