If that title doesn’t entice you, then you’re obviously not an Oreo Cookie lover! I can’t believe I just recently discovered these Peppermint Bark Oreo Cookies at the store. They taste just like Thin Mint cookies, which are my fave.
Baked into your (easy to make) box brownie mix, you have an irresistible combination that will surely be a hit amongst friends and family! Plus, the addition of crushed peppermint candy on the top gives it a little color and crunch!
It’s never too early to start thinking about holiday goodies for your bake exchanges and parties. I know I love to make different baked goods, so that people don’t get all of the usual cookies and breads.
To make these, all you need is a box of your favorite brownie mix, about 15 Oreo Cookies (or more depending on the type of baking dish you’re using). I chose the new Peppermint Bark ones because I love the taste that it gives. It takes a regular brownie up a notch in festive flavor!
Line your baking dish (I used an 8×8 glass pan) with 1/4 of the brownie mix, then lay down one layer of your Oreo Cookies (be careful to not push them into the batter). Carefully pour in the rest of the batter and cook as instructed on the packaging.
I use a simple recipe to make the buttercream frosting, but feel free to use or make whatever topping you like. With the addition of crushed peppermint candy, it makes your brownies pop with a Christmas look.
Vanilla Buttercream Frosting: 3 cups powdered sugar, 1/3 c butter softened, 1 1/2 tsp vanilla, 2 T milk. Blend all with an electric mixer on low. If frosting is too thick, gradually add in more milk.
Add in crushed peppermint candy canes as desired.
Once the Oreo stuffed brownies have cooled, cut them, frost them, and throw on a little extra peppermint candy cane on top for extra garnish! Enjoy!
