Total Time 35 minutes

Ingredients

  • 1/2 package Dry Rice Stick Noodles
  • Fish Sauce use to taste
  • Pad Thai Sauce 1 packet or (if from a jar- to taste)
  • 2 Eggs
  • 1/2 Onion chopped
  • 1 cup Firm Tofu chopped
  • 2-3 Green Onions chopped
  • 1 Lime 1/2 to cook with, 1/2 for garnish
  • 1 tsp Sugar to taste
  • 1 Tbsp White Vinegar to taste
  • Cilantro garnish
  • Fresh Bean Sprouts garnish
  • Crushed peanuts garnish

Instructions

  1. Soak your Rice Noodles in some water until they soften. (We did it about 30 minutes before we cooked them)
  2. Add some oil to a pan or wok and let it heat up, then add in your cut up tofu and white onions.

  3. Let the mixture cook but be careful not to let it burn. Gradually add in the 2 eggs. Stir until completely cooked, remove from heat and set to the side.

  4. Take your noodles that you were soaking and drain them. Place them into a pan or wok in high heat and add a little water (maybe 1/2 cup) to get the noodles really soft.
  5. Add your packet of Pad Thai sauce (or use your jar of Pad Thai sauce, to taste) and mix it in really well. Then add in your fish sauce, white sugar, white vinegar and juice from a 1/2 of a lime.

  6. Take your tofu-onion-egg mixture and slowly add it into the noodle pan, folding everything in evenly. Toss in the chopped green onion.

  7. Plate the noodles on a dish and garnish with fresh cilantro springs, crushed peanuts, fresh green beans and some lime wedges!

This is a recipe that you make according to how you want it. If you don’t like tofu, then you can use chicken or shrimp. Also, if there are any nut allergies, clearly omit them all together. Want some spice? Add chili peppers at the end.
