So its mid-June out here in Chicagoland and no surprise it’s gloomy and semi- dreary out. We’ve learned we can’t predict the weather nor can we expect it to be what it SHOULD be this time of year.
Pretending that’s nice out while I’m cooped up indoors, why not make a tomato basil mozzarella goodness!
Ingredients:
2-3 Heirloom Tomatoes
1/2 lb of fresh Mozzarella cheese
1/2 oz of fresh Basil leaves
Extra virgin olive oil
Balsamic vinegar
Salt
Pepper
Preparation:
1) Slice tomatoes into plate
2) Slice mozzarella on top of each tomato
3) Add 1 basil leaf on top of the mozzarella
4) Drizzle olive oil and balsamic oil on top of the basil. Add salt and pepper to taste
5) Enjoy!
