My mom makes the best asian noodles and they are so easy to make. We want share it with you guys so you can make it too! Here it is in a few easy steps. Of course, it helps that you already have these staple ingredients in your house (like any good asian cook would, of course!)
Ingredients:
- Noodles of your choice (We prefer noodles that are size small and either rice or bean thread. The mung bean noodles are really clear once cooked and the rice noodles are opaque. You may choose a larger noodle if you desire)
- Meat of choice- Precooked (We like pork or chicken)
- Fish Sauce (use to taste)
- Beef Flavored Paste (about 1 Tbsp or to taste)
- Preserved Cabbage (To taste)
- Spinach (to garnish)
- Cilantro (to garnish)
- Green Onion (to garnish)
Preparation:
- Presoak your noodles for about 15-30 minutes before cooking dish. We used the mung bean noodles on this dish and soaked the noodles in a bowl of water on the side.
- Once softened some, add them to pot of boiling water; start cooking your noodles a bit, to soften them further.
- Chop up your meat and onions.
- Start boiling another pot of water with at least 2 cups of water for, depending on how much noodles you are using, you may need another 1-2 cups of water.
- Add in about a tablespoon of the preserved cabbage. Then add in about a tablespoon of the beef paste. Now add in the fish sauce, a few shakes (Remember, all 3 of these items are all to taste, so if you want more flavor of one or another, then feel free to add as you like). If you feel like you’ve over-added anything and you don’t care for the taste, just add in more water to your pot to dilute it.
- Add the cooked noodles, per the package directions on how to prepare.
Finish:
Add the cooked noodles from the first pot into your second pot with all of the other ingredients in it. Transfer into your bowls and garnish with your meat, cilantro, chopped onions and spinach!
Obviously, if you are vegetarian, you would not add in the beef paste or any meats. This dish would also work well with a firm tofu!
